You may have observed the use of turmeric during performing rituals. Turmeric is believed to be a symbol of auspiciousness, purity, prosperity, and fertility. This is why it is used at the beginning of any auspicious event, including weddings. It is also used to hold special rituals to please Lord Vishnu.
Turmeric represents fertility, prosperity, and material and familial happiness. In contrast to it, Lord Shiva is known for his renunciation and lack of attraction towards worldly desires. He is often seen smeared with ash on his body. This symbolises his disconnection with materialism. Thus turmeric stands contrary to the lifestyle of Lord Shiva, according to religious beliefs. This is the reason it is not offered to him.
Adding to it, according to Pandit Yogesh Choure, turmeric is associated with the planet Jupiter, whose energy is beneficial but does not align with the energy of Lord Shiva. Hence it is said to not offer turmeric.

According to the astrologer, the mismatch of planetary energies suggests that offering turmeric to Lord Shiva may cause an imbalance in energy that can have several adverse effects.
