Khichdi:

Mix moong dal (green) and rice in a cup. Keep the dal-rice mixture in a bowl of water for 15 minutes.

To prepare tadka: In a frying pan, stir fry black pepper, asfoetida (heeng) and cumin seeds in two teaspoons of ghee.

In a presure cooker, put 3 cups of water and boil the rice and dal in it. Put a little less than 1 spoon of salt in it and cook. Close the cooker and give three to four whistles.

Once the khichdi is cooked, add the tadka to it.

Aloo tamatar:

Boil 4 to 5 potatoes in a pressure cooker. Mash 2 to 3 tomatoes in a mixer and keep aside.

Peel the boiled potatoes and cut into small pieces. Heat oil and add jeera to it. Stir fry the jeera until red. Add the mashed tomatoes, salt, red pepper, turmeric powder, garam masala, dry methi and fennel (saunf). When the mix gets a little dry, add water according to the desired consistency and boil for some time.

Pindi chana:

Leave 1 cup white chholey in water overnight. Boil them in 3 to 4 cups of water. Boil tea in another utensil and add that to the chholey. Add salt to taste, black cardamom, cinnamon, bay leaves and cloves. Close the pressure cooker's lid and give 7 to 8 whistles. Make sure the chholey get soft. Open the lid and add black salt, cumin seed, red pepper, dry coriander powder, mango powder, chana masala and mix it all. Grate garlic and stir fry in little bit of oil. Add it to the chholey and stir well.

Petha sabzi (Pumpkin):

Peel a pumpkin and cut it into pieces. Heat ghee, stir fry cumin seeds and asafoeteda in it. Add the pumpkin pieces and stir for a few minutes. Then add salt to taste, red pepper, fennel (saunf), fenugreek (methi) seeds and half a spoon of sugar. Give 2 to 3 whistles to the pressure cooker. Open it and mash the mix. Add garam masala and mango powder and mix it. It's now ready to serve.
