Sweet curry powder is made from the sweeter spices. It lends itself well to any curry dish that tastes better with a little sweetness added, and not much heat.
If using fresh spices, grind or mill them in readiness. Fresh spices will always have a superior taste over pre-ground varieties.
Mix the spices together in a small mixing bowl. Combine well.
Pour into a suitable airtight container for storage. Use a funnel to assist so that you don't lose any.
Label and store. This curry mix will keep well for up to 6 months. Store in a cool, dry place.
